A preparation with a fresh and aromatic flavor that brings out the unique and unmistakable taste of these fruits. The secret of a delicious pesto undoubtedly lies in the use of pistachios of the best quality.


Preparation is very simple: chop freshly blanched pistachios and season with basil, cheese and lemon zest.

This sauce is perfect for a simple pistachio pesto pasta. However, if you want to spice up your pasta dish, try, for example, pasta with pistachio pesto and shrimp, pasta with pistachio pesto and salmon, gluten-free pasta with pistachio pesto, shrimp and sun-dried tomatoes, or the fantastic pistachio lasagna! Of course, you can also enjoy it on crunchy bread croutons as an appetizer.

Here is what you need for our pistachio pesto:

  • 120 g shelled pistachios (unsalted)
  • 3 tablespoons of pine nuts
  • about 60 ml of extra virgin olive oil
  • 40 g of parmesan cheese
  • juice of half a lemon
  • basil
  • salt/pepper

Let's move on to the preparation.

Toast the pine nuts briefly in a frying pan until lightly browned. Place the pistachios, pine nuts, and basil in a blender. Add the lemon juice and a little olive oil and blend well. Then add the parmesan cheese and oil until the desired consistency is reached. Season with salt and pepper, and the pesto is ready.

If you do not want to consume it all right away, you can put it in a jar and store it in the refrigerator. It keeps well for a few days.
